My Christmas Great Cake Recipe:
Ingredients required:
- 1lb raisons
- 1lb currents
- 1lb cherries
- 1 ¼ lb sugar
- 1lb butter
- 1 lb flour
- 12 eggs
- ½ lb almonds
- ¼ lb orange peel
- ¼ lb shortening
- ¼ lb dates
- ½ lb prunes
- 1pint of rum
- 1lime skin
- Dash of Angostura bitters
- Dash of vanilla essence
- Dash of cinnamon spice
- Browning to darken cake color
Process:
One month or more before you are ready to bake cake, mince the following ingredients and store in a jar tightly closed. This will give the cake a better flavor and taste.
Mince:
Raisons, currents, cherries, ¼ lb sugar, almonds, orange peel, rum, dates, and prunes.
Preparation:
Pre-heat oven to 350degrees
In a large bowl beat remaining sugar and butter together - add also the lime skin - until mixture is almost smooth – sugar is no longer felt while beating. Add the 12 eggs, folding one at a time into the sugar/butter mixture. Add also the essence, cinnamon, and Angostura bitters at this time.
Next remove the lime skin and add the stored cake mixture to the sugar/butter/eggs mixture. Do not beat in this mixture just stir until both mixtures are blended. Next gradually stir the flour into the mixture. The mixture should be very moist but not of a runny texture. If mixture is too runny, add a little more flour.
Lightly grease and flour three 1lb cake baking pans, line the bottom of cake pans with cut-right paper and pour the cake mixture into ¾ of each pan. Place in oven and bake for approximately 2-2 1/2 hours. Place a container with water
in the bottom of the oven – this helps to provide moisture in the oven during the baking process. To check if cakes are finished baking, open oven after two hours and insert a tooth-pick or similar object into the center of the cake.
When the object is withdrawn and there is no mixture on it, the cakes can be removed from the oven and placed to cool. While cakes are cooling, add a mixture of falernum, and red wine to the cakes (this mixture closed any cracks on the surface of the cake and also add moisture to the cake). Once cool eat a slice with your favorite ice-cream or try it alone.
